Steak Tacos with Lime Marinade
Ingredients
1.5 lbs Wagyu Flat Iron Steaks from Villacaro Farms
Taco Shells
2 Bell Peppers, diced
1-2 Poblano peppers, diced
1 white or sweet onion, diced
Toppings of Choice: lettuce, red onion, shredded cheese, sour cream, avocado
Marinade Ingredients
Juices of 2 limes & 1 orange
2 cloves garlic, minced
2 tsp agave
1 tsp oregano, cumin, salt, chili powder
1/2 cup olive oil
Directions:
Prep: Thaw steaks, keep cold until ready to marinate. Slice bell peppers, poblano peppers and onion and place in a cast iron skillet.
1. Combine marinade ingredients in a mixing bowl. Add steaks and marinate for at least 2-4 hours.
2. Cook your steak following either method below:
Reverse Sear Instructions: Pre-heat oven to 250. Cook steaks for about 20-25 mins. Then sear in skillet for 45 seconds on each side.
Traeger/Smoker Instructions: Heat to 180 degrees and cook steaks for 45-60 mins.
3. While steak is cooking, season the peppers and onion with salt and add olive oil. Saute until browned. Then keep warm.
4. Let your steaks rest for 5 mins. Slice on an angle against the grain - this is key to tender bites!
